Stuffed Green Peppers & More






 Good Friday morning blogger friends. I'll start out with the recipe I promised so here goes:
I found recipe on Pinterest, and the credit goes to a blogger amandathevirtuouswife.com.

Stuffed Bell Peppers

 8 bell peppers
1.5 lbs. ground beef (cooked & drained)
1 onion, chopped
2 cloves of garlic, chopped
1-8oz. can of tomato sauce
1 cup instant brown rice (Minute Rice), uncooked
Shredded cheddar cheese
Salt & pepper

Wash peppers, cut off tops, remove seeds and inside white areas. Cut a bit off of bottoms so they sit flat.
She mentions to chop up left over top and bottom pieces to add to meat and rice mixture, I did that.


Combine cooked meat, onion, garlic, rice, tomato sauce, and extra chopped bell pepper. Add salt & pepper to taste.


 Stuff peppers. I stuffed mine full and placed on a parchment lined 9x13 cake pan. 



We cooks like to taste test, and I found the meat/rice mix to be quite tasty (lol, I could have eaten half the pan), so I stuffed my peppers quite full and I added more tomato sauce to each top.


I then added the cheese. I took the pan of stuffed peppers to the freezer, then once they are frozen solid I will put them in labeled containers.

Just a few of my alterations.....
I had various sizes of peppers so more than 8.
I used ground chuck instead of ground beef. I don't like paying for meat that cooks up and floats in a ton of grease.
I used uncooked white Minute Rice instead of the brown.
I had to substitute Velveeta Shreds because I didn't have shredded cheddar cheese.
I used more tomato sauce and topped them all with about a tablespoon extra before putting on cheese because I like my stuffing to be a little more moist. I found the uncooked rice will absorb the sauce once it is added to the meat in the pan.

I realize it has been ages since sharing any yarn projects but I do have pictures of several of them. I'm not going to add details because it has been awhile since these were worked on and completed. It would take a bit of digging for me to share patterns and I am willing to do just that if time allows. So bear with me and I'll do what I can if need be.



 






Well, there you have it, a few projects I managed to finish before my hands started hurting me. I have good and bad days with the arthritis. I managed last winter to crochet and knit up the bulk of my yarn stash into winter scarves and sent around 30 to the Cherry Street Mission in Toledo for the less fortunate and homeless. It was the perfect project for using up bits and pieces of yarn and putting it to a meaningful use. Then along came the Woman's Movement and I found myself once again drawn to a cause, buying pink yarn in various shades, and knitting a couple caps, one for my sister-in-law and one for me. I plan to make more, hand pain or not. I'll just have to work through it and not be a cry baby.

I am happy, no, I am thrilled to be back here again. None of you know how much I have missed all of you.

  1. Can I say we honestly missed you too! i love your yarny projects and those peppers look delicious. I am sorry your hands are hurting so much Susanne. I am pretty boring myself just so you know. I think that is what blogging is all about, the good, the bad and the boring. It is sharing a bit of our daily lives, that is how we connect. Have a great weekend.

    1. Awwww, this comment has made my day. I know we can be our own worst critics, but I have never found your blog boring. You are quite interesting.
